One thing I donât hear anybody mention is how every pie they send out isnât very crispy. Sure the edges are charred but we should ask for well done so that the whole pie is crispy. What Iâm saying is the whole middle part of the pie is a bit undercooked and soggy.
Despite the lack of crispiness, that spicy diablo sauce is incredible. Itâs very minimally spicy which is good. Doesnât need to be spicy, just needs to have a different flavor than traditional marinara. The pepperonis are also to die for. This is coming from somebody who didnât like pepperoni prior to this pizza.
Finally, I wish there was more cheese as their pies have a minimal amount of cheese. When itâs all said and done, the pie is covered in generous amounts of pepperoni and grease so technically more cheese would overpower it.
Overall, a great pizza in terms of having a distinct flavor, and standing out in a different way. Iâm going 8.4. Make the crust crispier all around and more like an 8.7.
