Wow, A LOT to unpack here! Known for a few different styles, I felt like I had to try their “Big 3.” Let’s start with The Original Prince, a basic Neapolitan style round pie. Extremely doughy, shockingly soft with zero crisp, but still very tasty. Heavy cheese & sauce but both have well above average flavor. A solid 7.6 for the round pie, a score that could jump up if cooked to a crisp. Now for the SoHo Squares, starting with Prince Perfection. This is a top 3 square slice I’ve ever had. The fresh mozzarella underneath the uniquely sweet & tangy sauce, complimented by sprinkles of pecorino romano cheese works together like a beautiful symphony on top of a perfectly crisped yet delightfully fluffy dough, highlighted by an outstandingly crispy crust. This tops out at an 8.8 but flirting with a 9. Now for the signature slice: The Spicy Spring. I’m not a huge pepperoni guy but I had to try this marquee pizza. Heat warning: everything about this square is SPICY! The pepperoni has some serious bite but it’s the fra diavolo sauce that truly burns your taste buds. It’s an incredibly unique taste that fans of hot & spicy will truly enjoy. On top of crispy dough & perfect crust, the Spicy Spring is one of the more interesting slices you’ll ever try. Not particularly my style but I did appreciate the overall flavor. This square comes in at an 8.2 and for Prince Street as a whole, that’s an 8.2 final score.
