Pizza Review
I’m not a big fan of very soft pizza, but despite the lack of crispness, the fluffy soft dough actually works pretty well on this pie. Softer pies can be very mushy but in this case, it adds to the freshness of the pizza. The super creamy and lava-like cheese is some of the best I’ve had on a fairly standard, non-Neapolitan pie. Terrific sauce, sweet & tasty...a fastball straight down the middle among sauces. There’s a little bit too much grease emanating from the butter fat in the cheese but it’s manageable. This is a very solid, reliable, North Jersey pizza. I’d really like to see if a little more time in the oven could crisp this pie up and push the overall rating into the 8s. Maybe next time I’ll ask for it well done and re-score if necessary.
