Middle of road sauce. Not sweet not overly tangy...has a unique spice I can’t place. Not bad just distinct. I put this pizza in a top shelf category. Very good but not great for me. Tangy sauce and thinner crust bumps it to a great pie for me. Everyone is different. Crust is crisp but has a good chew to it, not at all doughy. Cheese is tender and well cooked. There are no negatives I can see or taste. Real pizza ovens. Dough stretch on semolina flour. Definitely a quality pie.
