Pizza Review
This is a classic battle of texture vs taste. Razor thin dough, super light, ultra crispy with uber crunchy crust, the texture is off the charts; unfortunately, the taste just doesn’t match the texture. While the dough isn’t particularly flavorful, the undercarriage is very firm, with quality char, a great base for good ingredients; but the cheese and sauce fall short. Even though the cheese is tight like a bar pie, it’s a pretty generic blend, loaded with grease and way too salty from the excess oil. The biggest problem is the pizza is severely undersauced, a borderline white pie. The dearth of sauce makes the flavor undetectable. With more grease than sauce, this pizza is just a salty cracker-like pie. There is room for real improvement here and I don’t believe it’s a lost cause. Increase the volume of sauce and maybe switch to a better quality of cheese to reduce the grease. The terrifically crispy dough provides a lot to work with, making for a somewhat thin and sexy pie, just lacking true substance and genuine flavor.
