Riggatti's Wood Fired Pizza

In St. George, Utah for a couple weeks, and I was eager to hit up a few pizza joints that had good reviews. Yesterday I hit up Pieology Pizzeria, and was disappointed. Today, with all of the good reviews, I was hoping for a better experience at Riggatti’s. But, again, I was disappointed. I ordered the medium pepperoni pizza and ask them to add green peppers for me, which they did. The crust was good and chard perfectly, but couldn’t figure out why the undercarriage was rubbery and not with a crisp. The sauce is important to me, and like it a little bit sweet. But there was no sauce! It was non-existent. But the thing that ruined it for me was the incredible amount of salt! And maybe having sauce on the pizza would’ve balanced it out a little bit. The green pepper I asked for was small and irrelevant, cheese was tasteless. Pepperoni was fine. But, again, I couldn’t understand the huge amount salt, and the sauce, or lack there of. 🍕 5.3 🍕
