Pretty good Chicago style pizza. The dough is flavorful. The cheese is Grande so it is of the highest quality you can get with that distinct creamy flavor. It’s just a bit too much on there. The sauce is a chunky, savory sauce with a hint of sweetness. The underside and outer rim have that oiled pan crunch but it seems slightly overdone for me. Authentic Chicago pizza has a small layer of crisp with a very soft bready crust. This may be a lower hydration or a higher percentage of bread flour blended in, or it could be baked at a bit higher temps. I’m thinking a combination.
