The sauce is almost invisible and has a slight tang with no major flavor profile. The mozzarella is mediocre with zero salinity or chew and there is way too much of it. The dough is pedestrian, overworked and undercooked. The undercarriage looks nice but is floppy with decent flavor.

SAUCE: needs to be thinner and better seasoned, also an even distribution would be better
MOZZARELLA: either improve the quality of apply less to the slice. The heat can’t penetrate the cheese blanket so it leaves the dough par-cooked
DOUGH: try to work it less when making the pies, the flavor is very good it’s just very dense.
Summary: thinner sauce, better cheese or less of it coupled with a lighter dough can bring this to the high 6.0’s. There is too much missing to shoot for anything higher.
