This slice has a crust that’s crispy but doesn’t crack when folded - a feat not often achieved with NY style. For my taste I like more color on the undercarriage and rim, but maybe you approach crackage territory if you go that route with this crust. It’s a well balanced and composed slice. Some grease drip will drop the score some, but this is good for on-the-go, late night, or a quick fix.
