🟥BEST DETROIT STYLE ALERT🟥 Established in 1989, this joint looks much older than it is, serving classic Detroit style pizza & round NY Neapolitan sourdough pies. They claim they are Detroit’s only pizzeria that uses naturally fermented sourdough with no sugar, vegetable oil or commercial yeast, with only locally sourced ingredients, never bleached or bromated flour. While the round sourdough pies look fantastic, I opted for the traditional Detroit style square in the city that invented it. True to form, the pizza is baked in a square pan; however, they cut the pie into atypical triangular slices instead of the usual squares or rectangles. This is one of the crispiest & lightest Detroit style pizzas I’ve ever had. While the dough looks somewhat heavy, it’s incredibly light, airy & fluffy with a tremendously charred undercarriage, to go along with an oily, buttery, greasy texture that’s also terrifically tasty. In lieu of crust, the signature buttery caramelized cheese created by the walls of the pan forms an outrageously sharp & otherworldly crisp around the edges of the pie, a calling card of truly sensational Detroit style pizza. The crisp, crunch & flavor of the dough & caramelized cheese combined is simply outstanding. Melty, creamy & downright delectable, they use Grande mozzarella, which is rare for Detroit style, blanketing the dough beautifully, deliciously flavorful, providing perfect surface coverage. Dispersed in splotches, the sauce is placed atop the cheese, in typical upside down fashion; well-balanced with the cheese & dough, there also appears to be a smidge of sauce underneath the layer of cheese. Scrumptiously sweet, tantalizingly tangy & bursting with robust flavor, the sauce sings with zest, zip & zing, complimenting the dough & cheese marvelously. Slightly acidic but mostly manageable, the sauce is mildly neutralized by a dusting of Parmesan. Overall, this is one of the best & most well-rounded Detroit style pies I’ve ever had. Light & fluffy dough with a crispy & crunchy texture, combined with a top-notch cheese that provides awesome taste & consistency to go along with an addictively delicious sauce makes for an unbelievably fresh pilgrimage pizza, a must-try pie if you’re in Detroit.
