This pie is a cross between New York style & football pizza, ironically thinnish & somewhat heavy. A large pie here is a huge 18” with surprisingly thin, but tremendously filling slices. While the dough isn’t particularly crispy or crunchy, it’s terrifically tasty with moderate char & a substantially blackened undercarriage providing fantastic flavor. Minimally floppy despite the lack of crisp, this is an oddly doughy pizza for such a thin pie, particularly the crust, which is shockingly soft with just the slightest crunch. Solid, yet unspectacular, the mozzarella cheese blend is pretty standard. With a modestly creamy texture, this has a very typical football pizza cheese taste. Must be a quality mozz cause the grease situation is more than manageable, a hardly noticeable amount. Speaking of barely noticeable, the sauce is puzzlingly subdued. In a rare circumstance, I can taste more flavor in the dough than in the sauce. Mildly sweet, not much zing or zest & just a touch of tang, perhaps the volume is just a little low, leaving the sauce lost in the background with just a hint of flavor instead of punching through the taste of the dough & cheese. Overall, this is a really solid combination of ingredients with lots of potential. Improve the crisp of the dough & punctuate the sauce with another ladle and this pie could catapult into the travel-worthy 8s. As it stands, the taste edges the texture, making this cross between NY style & football pizza a terrific any-day-every-day neighborhood pie.
