Simo Pizza delivered one of the most memorable pies I’ve had in a long time. The standout feature was the undercarriage—beautifully blistered with an exceptional char that added incredible flavor and just the right amount of crispness. It may very well be the best undercarriage I’ve ever had. The crust struck a perfect balance: light, airy, and crisp, while the cheese and sauce complemented rather than overwhelmed the pie.
