This was an odd slice of pizza, for me. Technique-wise, it was everything I look for in a good slice. Crust was thin and crispy, with a good undercarriage, and quality cheese on top. Slices were very generously sized, and when folded to eat, enough grease dropped out the back end to form a little puddle on the plate for dipping the pleasantly chewy cornicione. The taste however was just lacking. I mostly tasted the cheese, as the crust didn’t seem to have much flavor on its own. Maybe it needed more salt in the crust, or a bit more sauce on top.
It wasn’t a bad pizza; I’d rate it a 6 on technique alone, it just needed a bit more to get it into the great range for me. Hopefully it was just these slices on this day, and next time I’m in the area I’ll try them again and be able to rate more favorably.
