Served Tyra Banks hot in 3-4 minutes with a decent Rt. 440 crisp and a heavy Kellogg Square flop.
FIRST BITE SCORE: 6.9
The sauce very good with above average seasoning, very nice texture and a pleasing tang. The mozzarella is high quality with very good salinity and chew. The dough is airy, crisp and a tad bit chewy. The undercarriage is nicely charred, very thin with a great bite and chew.
SUB SCORE: 7.1
SAUCE: not much to do that can make this better other than using less dried oregano and thinning the sauce a bit.
MOZZARELLA: the type used here isn’t compatible with the oven because at first bite the cheese is stringy and soupy. Once it has cooled and coagulated, the flavors are more pronounced as well as the salinity.
DOUGH: other than working the outer rim of the pie and adding a bit more salt, there really isn’t much more needed.
Summary: if the cooking method can be adjusted and coupled with slight boosts to the level and quality of the mozzarella and pizza sauce this could be a high 7.0 slice. Points were deducted for oiliness, inconsistent flavors and the heavy flop. This is the first place I’ve tried in Jersey City and doesn’t disappoint. Add this to your list of trustworthy pizza joints!
