When I called the order in, they told me it would be ready in 5 minutes; that’s because they serve 12” artisanal-style wood-fired personal size Neapolitan pizzas, flash-cooked at over 800° and ready in under 2 minutes. Neapolitan pies have become the “fast food” of the pizza world; classier than chains like Domino’s & Papa John’s but nearly as generic. This is another run-of-the-mill Neapolitan clone, mass produced as if it were frozen pizza you’d find in the supermarket. The dough is typically soft, chewy in texture, charred but not crispy, with the usual absence of crunch. While the cheese is tasty, it’s scantly spread atop the pie; they need to double the amount of fresh mozzarella. I didn’t mind the sauce; it was sweet with a nice kick, plenty to go around, easily the star of the pie. There’s definitely not enough balance between the lack of cheese and abundance of sauce; it feels like a red pie. There’s just nothing here to distinguish this pizza from generic Neapolitan pies. While I enjoyed the sauce, the dearth of cheese & lack of crispness hold this pie back from even reaching the dime-a-dozen standard 6.8 score, coming in just under at a rather generous 6.7 rating.
