Alright Frankie.... We are in Freehold NJ.... this is my New Jersey sleeper spot. Not a New York transplanted pizzeria like many of my favorites wind up being but this place is as New Jersey has Bruce Springsteen in the home of Bruce Springsteen. From the outside it looks like nothing fancy. And It competes with more yuppie conscious spots across the street like Federici‘s. But Stefanos actually blows it out of the water. I tested both slices for a reason and that reason is because they have the best Sicilian slice I’ve tasted it all New Jersey. So much so that it comes a very close second to Brothers pizzeria in Staten Island as being one of the best Sicilian slices I’ve ever tasted. Now onto the actual review. As for the regular slice it’s in the upper echelon of the standard run-of-the-mill slices. And that’s not a knock because I’m comparing it to your regular spots in New York as well and it’s strong. Nice thinner crust. Not much of a flop. They use good quality cheese and the sauce although not as hardy as I love has a decent flavor to it. The slice always has a nice crisp on the bottom and a nice crunch when you bite it. My rule for a good slice is if you get in on that end piece of crust without a blink of an eye you ate a good slice of pizza... so as far as the slice goes considering it’s a standalone Jersey spot I’m going high with a 7.9. As for the Sicilian slice wow! Always on point. Great usage of cheese. Nice amount of sauce. Both have really great flavor but the key is the dough and the crust it’s just different. It’s just different than 95% of the Sicilian slices will taste. And that’s the same for Brothers on Staten Island it Has body to it but crisp... and when I say it has body I don’t mean it’s really Doughy... The bottom part of the slice has a nice crunch and buttery type of texture that just melts in your mouth. As for their Sicilian slice I’m going 9.1. I would go higher but there are 1 million pizza places all over this country and who knows what the rest have in store. So as far as grading goes, which I’ve never done before I’m going to average the score out my own way and give Stefanos a solid 8.5.... that’s the review
