I’m not the biggest fan of personal pizzas, they usually lack sauce or cheese due to their smaller size, so I was a little skeptical going in, but this wood-fired brick oven pie was absolutely delightful! Thin, light & airy with a lot of flavor packed into each bite. Most wood-fired pies I’ve had have been lacking in crispness and usually have a soft & chewy texture, but this pizza maintains tremendous crunch with a deliciously crispy crust. The sauce is very unique, not your typical red tomato paste, it’s more of a lighter vodka sauce with a fantastic blend of spices and fresh basil to really bring out the overall flavor. The cheese is also a really great mix of bufala mozzarella & Parmesan, so creamy, it melts in your mouth. The only real knock against is that it doesn’t travel particularly well, best to eat on site. Other than that, a really pleasant surprise; I just wish they made this pizza in a larger size!
