Served Solar Eclipse hot in 6-7 minutes with a hard Bridgehampton flop and zero Goldberg’s crips. First Bite Score: 5.1 The sauce was very good with a mild tang and mild sweetness. The slice is well seasoned and could use a tad more salinity. The Mozzarella is ok with medium chew and salt levels. The dough is floppier than most NBA players with excellent sweetness and salinity. The dough recipe is very good but they need to use low moisture mozzarella or a more chunky sauce to help keep the dough dry would promote crisp and a sexy undercarriage. The ratio is completely off because there are pockets where one component is absent. Needs to be constructed with more care and attention to ingredients. Sub Score: 5.1 SAUCE: 🍅🍅🍅🍅 (4/5) Very, very well done. Great flavor but not present throughout the entire slice. MOZZARELLA: 🧀🧀 (2/5) Very high moisture and medium chew and salinity. Switch to a low moisture cheese to promote a better cook. DOUGH: 🥖🥖🥖 (3/5) Well made and very tasty with a nice chew. There is absolutely no crisp to it. Keep the recipe but alter the cook time/ liquid in the final product. RATIO: ❌ Way off. I don’t know how you can have separate pockets where at least 1 of the main components are absent. I’d go back to a more simple way to dress the pie. Summary: This was a very odd slice because the flavors didn’t hit or complement themselves until the final third of the slice. Lower quality ingredients and the fact that this is busy lunch box that sells pizza. Next time I’d skip the pizza and get a traditional lunch. The other food looked wayyyy better than the pizza.
