Opened in July of 2023, Tramonto’s is the new kids on the block on the outskirts of Asbury Park in the Jersey Shore pizza game, coming up on their one-year anniversary. They have all kinds of specialty pizza varieties & styles, a veritable cornucopia of options. Their plain cheese pie is a fairly standard football pizza with a well done approach. Beautifully blackened but not crisped, the dough is very soft & shockingly floppy from the heavy cheese & thick sauce, adding significant weight to each slice. The undercarriage is charred & tasty with some seeds baked in to prevent moisture buildup; however, a crispier, thicker dough would provide a more firm & less flimsy base. With terrific texture & smokey taste, the crunchy crust helps to redeem the soft & floppy dough. A rather heavy shredded mozzarella blend, the cheese is delicious nonetheless with a delightfully creamy consistency, flavorful & not overly greasy; but it gives off extra cheese vibes, particularly near the center of the pie. Despite the wonderfully melty flow, I wouldn’t mind if they dialed back the volume of mozz just a bit so that it’s not thicker than the dough. Robustly rich & hearty, the deep red tomato sauce isn’t super sweet but does have a reasonable amount of sweetness & decent savoriness without being too salty, to go along with a touch of garlic & bitterness from the oregano & other tremendous seasoning that creates a uniquely delectable taste. Melding well with the dough & cheese, the sauce has a distinctiveness that separates this pie from typical Jersey Shore football pizza. Overall, this is a delicious pie with quality components; I’d just prefer a crispier texture & a little less cheese atop. This joint is right on the cusp of destination pizza, with their other specialty pies & styles quite possibly being travel-worthy, particularly their Detroit style pizza & XL Bar Pie. There’s lots of potential here to become one of the top spots along the Jersey Shore.
