Pizza Review
A crunchy, slightly spicy, square of goodness. The square Sicilian with hot honey and pepperoni is king. The thing thin is solid and comes in at an 8.2
Pizza Review
Haven't reviewed a pizza on this app in years. Came back just to review Trio, which is easily one of the best in the county. And has, rightfully, been praised by folks who've come up to review it from NYC right to the northernmost point in Westchester. This in their Thinny Thin, which you can get upside down—sauce on top of cheese. And despite most folks thinking otherwise, that topping method in line with many historic pizzerias: Tontonno's in Brooklyn, the original Lombardi's Manhattan, Delorenzo's and Papa's Tomato Pie in the Trenton area, John of Bleecker arguably the oldest surviving pizzeria in the US, Santarpio's in Boston, Charlies in Philly, etc. So Trio is in good company. If a crispy crunchy crust (18") that's still got a bit of give is your thing. This pizza's got it—every slice. Sauce on top = more flavor upfront. And this sauce isn't quite silky but isn't chunky either. Good balance between naturally sweet with a pop of acidity. And I swear it's got just a bit of garlic flavor in the background. Maybe I'm wrong. I also love when a pizza's got all the modern finishes that add flavor: extra virgin olive oil, basil, hit of parm—maybe that's what I taste in the sauce? Crust is, again, crispy, and fairly flat toe to tip. So if you love puffiness, get their regular upside down. But to be clear, this is not a super chewy crust. Though it is well done. And I have to say, they do everything good to great here. While I prefer their Thinny Thin overwhelmingly over their standard plain, their squares, upside down Sicilian, and even their fresh made pasta and meatballs are all good. The one thing about the Thinny Thin is it only comes plain (upside down or not) as of the last time I got it—late November 2025. IMO, as a pizzeria, Trio is up there with some of the very good to great pizzerias in NYC. I don't think that's over hype at all. I've eaten at all the major ones: John's, Lombardi's, Totonno's, Scarr's, Lucali, L'industrie, Lucia, Mama's Too, Best Pizza, Paulie Gee's, Bellucci's, etc. This Thinny Thin, specifically ranks up there with them. We all have different tastes. But if you're a big pizza fan that cares about pizza done well, I have a hard time thinking you'd rank Trio anything less than an 8+. And for this pie, there's very little I can argue with, it's phenomenal.
