Pizza Review
Wasn’t sure about this one going in. As I looked over the menu it definitely looked like fancy pizza, and those can go either way for me. When I got the box, i saw that I was right about it being a fancy pizza but it looked promising. Despite the inconsistent placement of basil, this is a great looking pie. It had a non standard cut, kind of like an X across the pizza that left uneven angles. Without a protractor, id guess the angles at 55, 55, 125, and 125. That’s the kind of cut I’d try to trick my brother with when splitting a Torino’s pizza, but didn’t have any impact on the look or taste of the pizza. Grabbed a 55 degree angle slice and held it to see that it had a pretty good flop to it - pretty thin pizza. The cheese held on even though the tip of the pizza dipped down; great sign. The cheese had wonderful flavor and a great balance of stringiness to breaking point. Of all of the ingredients on a pizza, cheese is the easiest for me to grade and this is clearly high quality cheese. Sauce was light with just enough zip to it. Now for the crust - it’s hard for me to describe this crust as it had the right amount of crisp to it while still maintaining some moisture so that it’s not like a cracker. Nice singed spots in all the right places giving it a great consistency. This is the best pizza I’ve had in all of New York, and I’m happy i feel so confident giving Tufino a 9.2 - that’s a review
