The sauce is decent with big tang and sweetness. It’s has mild seasoning and is a bit chunky. The mozzarella is pretty good with a soft chew and moderate salinity. The dough recipe is on point. This is the best part of the slice. Paper cut thin and a strong spot-charred undercarriage. The ratio is sauce heavy and the crust could be a tad thicker.

MOZZARELLA: not bad overall, but the slice could use more salinity and a harder chew.
DOUGH: they should just sell this with nothing on it. Step away from the Hobart and touch nothing. This is very close to perfect.
SUMMARY: I was rather surprised that the slice (halfzie) was as good as it was. Other that the sweet sauce and the soupy & thin cheese, this was a decent experience. LeBron, what do you think?
