Served in 3-4 minutes like warm cookies out of the oven with a 2x Greenville Ave flop and a hard JFK Blvd. crisp. First Bite Score: 6.6 The sauce is very light and fresh with balanced flavor and seasoning that has a tiny tang. The mozzarella is mid but not bad with low chew and salinity. Toward the middle there was a large band of clumped cheese. The dough is below average and you can taste that there is no love put in to making it. The undercarriage was nicely charred and papercut thin with a slight mouthfeel of bread not pizza dough. The ratio is all over the place with imbalanced placement of cheese and sauce. Sub Score: 7.0 SAUCE: actually this is quite pleasing, just put a bit more on the pie. MOZZARELLA: improve quality and pay more attention to the placement and ratio. DOUGH: maybe try to rest the dough for longer and let the gluten activate more. RATIO: unbalanced with heavy sauce then cheese and about a half inch collar with no cheese before the crust Summary: if you can get past the flies buzzing around in mid January (what up with dat?) and avoid this place late night, I think you will be very surprised. This slice had a few minor flaws that can be corrected, but the oil and grease level severely detracted from the final score. All in all I would come back for this slice. Final Score…
