These guys are all from Italy, they know what they are doing and they're using top ingredients and cheeses. The crust is absolutely the best, light fluffy, soft and yet crisp. If you don't like flop and you want more crisp. Have them keep it in for an extra 20 secs. Salad was really good also, authentic homemade.
