Served very hot in 3-4 minutes with a good Ossining crisp and no Rt. 9 flop. First Bite Score: 6.6 The sauce is decent yet very thick with a mild tang and strong oregano flavor. The mozzarella is low quality with zero salinity. The dough recipe is king here. It is nicely worked and just a tad under seasoned. The undercarriage is wonderfully crisped and is very thin. Sub Score: 6.4 SAUCE: overcooked, too much oregano and under salted. Mozzarella: use higher quality and apply more to the slice. Dough: standard, under salted. Id the sauce is cooked less, better mozzarella is used and more salt in the dough, this could be in the high 7.0’s. Still not a bad slice! Final score...

Simple sauce, ample cheese, bland crust. Nothing stellar, no complaints, true 6.8 country.

Thin, crispy, well-cooked. However, not the tastiest slice. Can't really taste the cheese, and the sauce doesn't make itself known until you're closer to the crust. At any rate, now that Sal's is closed, this is probably the best spot for a quick, decent slice if you're on Route 9/9A and don't feel like hitting every single red light in Ossining. 6.9 - Nice
