Pizza Review
This is complex pizza. Flavor all over the place! When I do homemade pizza, I aim for my sauce to have a particular flavorful kick to it, and anyone who's had it loves it. This sauce shares that spirit. The crust has cheddar baked onto it which adds character; I used to bake bread and would do the same, taking out the bread halfway to bake cheese on top. It too, has a lot of flavor. However, it's more of a traditional dough crust (although airy) and lacks any particular crunch or charring. All the flavors hide quite well the fact that, under the hood, this crust is still pretty standard, and I'd say that's its weakest link. But look, this isn't me saying it ain't good. It is! It's just that I'd looove to have this otherwise exact pizza, laid atop a charred, crispy thin crust 🤤 I topped this one with pepperoni and bacon. Everything tastes fresh and is aplenty; nothing was skimped on. I can't say the same about Tower of Pizza, which was also good, but left me wishing I'd (over)paid for double sauce. So what's the takeaway here? It's that you can tell that love went into making this recipe. The flavors were thought out, tested and balanced, likely many times, until they arrived at this. And they really do have something! I've a feeling that, behind this otherwise easily overlooked bar in the heart of Mid-City, is an owner who is just as passionate about pizza as many of us here are. Bravo, Mr./Mrs. pizza bar owner. Bravo.
