Extreme wolf 🐺 Philly 🔔 Highly rated, excellent pedigree 🐕 pizza alert Having done so many reviews it becomes difficult to get to places with a great reputation. In Philly, this is presumably at least top fifteen. Been on my radar for years. Let’s get to it. We’ll focus on the regular/standard slice, not the upside down Eye test - the standard slice looks ok. Nothing special Ratio - just a hair too much cheese, and a hair too light on the sauce, but barely Execution-baking process is perfect. The quality of both taste and ingredients is undeniable. Dough - a bit on the tasteless side. Has the tiniest hint of salt. Baked to perfection with pockets of air, perfect underside crunch, completely void of any areas that are over or undercooked. Just needs a tiny bit more taste. Sauce - seems overwhelmed by the spices. The tomato sauce flavor doesn’t come through. Basil, oregano, etc. certainly jump out. Utterly void of sweetness. One of the stronger tasting slices I can ever remember, and although the taste is pleasant, the tomato sauce gets demolished by the spices. Cheese - Hard pressed to really let the natural cheese flavor come through. Overwhelmed by the spices. Perfect chew Overall - everything comes together. None of the three ingredients are excellent, however, since they are all good, it makes for a positive experience. Ideally, needs to chill on the spices and let the major three ingredients do the talking Bonus upside down thingie - good stuff. Garlic bomb in a good way. 7.7 Gustav Mahler said, “In hindsight, my conducting responsibilities were too much. I should have composed an additional five symphonies, and regret that I wasn’t fully expressed as a composer.” Likewise, I regret the reviews of so many dumps. There is something to be said for limiting yourself to the best, like JM. Nice to finally review a place with a quality slice Not travel worthy. Certainly a gem in the neighborhood. Far too classy for Mets fans, however, I have no objection if you choose to eat whatever is in their trash dumpster in the back after closing

Opened in 2017 by owner Dean Kitagawa in the Callowhill area of Philadelphia, they make gas oven pizza from scratch under the motto: “No gimmicks, no shortcuts, no joke.” Their regular plain cheese pie is called the “Standard,” and comes in 2 sizes: small (14”) & large (20”). I ordered a large Standard, which is just a notch below medium thickness, certainly thinner than I expected, with a doughy & pillowy crust of minimal crunch. Despite some modest char on the crust & undercarriage, the dough is mostly soft & shockingly floppy. While fairly tasty, the texture of the dough is rather disappointing; I expected a much firmer pie from a gas oven. According to their menu, they use both mozzarella cheese & a housemade mozz, which combined has kind of a funky flavor. A smidge too salty, the blend tastes like other cheeses like pecorino, Parmesan & provolone are mixed in, creating a unique flavor & smell, which isn’t necessarily bad, just different. Moderately melty, the mozzarella has a good consistency, above average quality, but not as creamy as desired. The sauce is a mildly sweet & tangy marinara, more savory than anything else, along with visible seasoning and spices adding kick & depth to give the flavor some distinction. Given the saltiness of the cheese, I’d prefer a sweeter sauce blend. Shredded confetti basil atop the pie doesn’t particularly add much extra flavor, providing mostly cosmetic color & class, separating itself from typical Philly football pizza with more style than substance. Not a bad pie to say the least but a little too soft & salty for my liking, in need of crisping & sweetening of the sauce. Overall, this is super filling gussied up Philadelphia football pizza with signature Philly flavor. Much better than average pizza in the area but not quite a destination pie.
