MAJOR Mahopac flop. Barley any cheese, zero crisp, and the crust was no good. The sauce kept it from plummeting on three score card

Served just above cold in 2-3 minutes with no Mahopac crisp and a big 10541 flop. Sub Score: 4.1 The sauce is very heavy with good tang and seasoning. The sauce is very sweet and metallic in taste. The mozzarella is lightly sprinkled on and very poor quality with no salinity. The dough is very good with nice flavor and undercarriage. Sub Score: 4.4 SAUCE: needs to be lighter with less sweetness MOZZARELLA: improve quality and add more to the slice DOUGH: not much to complain about If the sauce was thinner with a better flavor profile and the oven gets turned up higher to provide heat and crispness this could touch the high 6.0’s. Margherita Slice: Great sauce, nice crispness on the crust, but they have to step up their cheese game. Sicilian slice was not bad.
