90 seconds is exactly how long it takes this thin crusted Neapolitan pizza to come off the oven’s spinning slab.
The pizza is solid, but two issues keep it from earning the gold.
First, you’d expect a pizza as thin to be a bit crispier. We’re talking doughy flop here, which makes it fall short of really earning its Neapolitan stripes.
Second, I found the mozzarella forgettable. With the sauce understated and the cheese is a tad bland, it just ends up being a well made pizza with little character.
Now don’t get me wrong, it’s GOOD pizza. It’s as good as any restaurant pizza with a good oven - but it could use another half turn around the oven and a cheese with a little more personality.
