Another new kid on the Brooklyn block, Ace’s Pizza opened in 2021 and serves up Detroit style pan pizza along with “Grandma pies,” which are thinner versions of Sicilian style pizza. I opted for the Detroit style which has light and fluffy dough, with a firm & crispy undercarriage, terrific taste and crunch, providing an excellent base for this style. Detroit style pizza doesn’t have a crust; instead, the caramelized cheese is baked right up against the sides of the pan and acts as an exquisitely crispy and tasty crust around the edges of the pie. The cheese is thick, contributing to most of the weight of the pizza but it’s not all-consuming. Instead of using just mozzarella, they melt a special blend of cheeses which I think includes a sharp Wisconsin white cheddar. With fantastic flavor and beautiful bite, this unique blend of cheese is terrifically tasty and gives personality to the pizza. One area that appears to be somewhat lacking is the quantity of the sauce. With just a splash on top and no sauce underneath the cheese, it’s slightly scant; just enough to provide added flavor but another smattering of sauce could go a long way. As far as quality goes, the sauce has an outstanding zesty garlic flavor, loaded with spice and tang to go along with plenty of zip. The flavor is so pungently powerful, you actually don’t need a ton of sauce to make this pie sing; it’s very enjoyable as is, could just use a smidge more. Overall, the dough, cheese and sauce work in heavenly harmony to constitute a delectably delicious Detroit style pizza. I’ll take Detroit pan style over Chicago deep dish any day but the thin New York style is still king. However, if you’re a fan of really good pizza, this pie is worth traveling to the Williamsburg section of Brooklyn for, especially if Detroit style is your thing.
