Brooklyn DOP is putting out a legit Brooklyn slice. The crust is the star—light, airy, and folds the way a New York slice should. It almost has that old-school bromated flour texture like Trumps. I could be wrong, and I hope I am because while I like that style, bromated flour isn’t exactly a health food.
The sauce leans slightly sweet with a nice hit of basil, and the Parmigiano Reggiano adds just enough salty bite without overpowering the pizza. My only nitpick? I’d take a little more sauce, but that’s personal preference.
Overall, this is a quality neighborhood slice that checks a lot of boxes. If you’re looking for a classic Brooklyn-style pizza with great texture and balanced flavor, Brooklyn DOP is well worth the stop.
