Man, Federici's and Calabria definitely nail that bar pie/New York almost hybrid type thing with the crust.
I just reviews Federici's saying it was the best bar pie out of the lot at the fest. But the more that I think about, it may be even better than them. Neither have that dry overcooked thing on top where all you can taste is the spidery strands of low moisture mozzarella. You can taste the sauce too
