Served NYC Subway, in the dead middle of the summer hot with zero 14th st flop and a hard 5th Ave crisp. First Bite Score: 3.4 The sauce is thin with no tang and good seasoning. The mozzarella is high quality with decent chew and salinity. The dough recipe is totally old school. It is razor thin with excellent chew and a good charred undercarriage. SUB SCORE: 6.4 SAUCE: very thin and flavorful. It caught me by surprise on the first bite because I wasn’t expecting it to be as good as it was. MOZZARELLA: very nice. Just the right amount of cheese in this well balanced ratio. DOUGH: when other doughs go to sleep at night they dream of growing up to be this dough. One of the best in my 100+ reviews. It’s up there with the big dogz! Summary: my first bite was like someone dropped a salt cube in the middle of the pie then sliced it and then served it. I was overwhelmed by the amount of pure salt. But as I worked my way through the slice it became better with each bite. Without the salt bomb I would give this slice a 8.4 easy. It is one of the most balanced ratios and well executed pies I’ve had to date. But with the salt bomb I give it a Final Score…
