Review from 5/22. First off I’ve been trying for what seems like forever to get one of these unicorn pies and today was my day as I’m thinking this is potentially the best pizza I’ve ever come across. Cold fermented atleast 50 hours the crust is light, airy and oh so crispy and crunch with perfect charring all around and underneath exploding with flavor as well as the tangy sweet fresh sauce using a blend of new jersey and California tomatoes. The cheese tho hits using blends of low moisture and part skim mozz topped with a pecorino Romano, the perfect topping to give it that zing in every bite. All three fazes of this pizza were complimentary of eachother, one of if not the best put together pies I’ve tried in 350 or more different places now. This should vault to the top of your list if your fortunate enough to secure one as they are very limited and you have to be at the ready when the dates are launched but my god was it worth the wait!!!
