Originally from STL, Dewey’s takes a departure from the classic, and in my opinion, bland STL provel cheese, wafer thin cracker crust approach..and instead delivers a solid hand tossed pie that appeals to cheese and sauce lovers of ‘MERICA. Perfectly salted Mozzarella with a tangy red sauce marks this slice. The crust is airy with an nice outer crunch..nothing fancy. I wish it had a more semolina flour punch..but it works well with a nice ranch sauce dip.. Worth a stop in a city that is more defined for its BBQ than it’s Pies..
