A rather aesthetically pleasing, crispy-looking, well done pie, I was hoping the taste would match. The dough has kind of an odd sandpaper-like texture, not particularly crispy; it actually tears away with each bite instead of a clean break. Despite a reasonably firm and dry undercarriage, the dough shockingly lacks crispness; only the nicely charred crust packs any kind of crunch. As you can see by the orange tinge, this is an incredibly greasy pie with heavy oil flow dripping off each slice. The cheese is quality with a nice taste but engulfed by the excess oil, containing much of the true flavor. The sauce is borderline bipolar; some bites are delightfully delicious and sweet with splendid spice, other areas taste like nail polish remover, a veritable flavor rollercoaster. I really like some aspects of this pie; and I truly hate others. I could see scores ranging from 6.5 to 7.5 for this schizophrenic and polarizing pizza. I feel like I should have enjoyed this pie more than I did. The bizarre quirks of the dough & sauce combined with the abundance of grease knocked the overall score out of the 7s down to a “looks sexy but isn’t all it’s cracked up to be” 6.9 rating.
