The original Sea Bright location was established in 1988 but the seasonal nature of the business forced the owners to move in 1997 to this more consistent year-round spot in Shrewsbury, NJ. Not to be confused with Federici’s legendary bar pies in Freehold, this is strip mall football pizza. The char & texture of the crust looks terrific; however, the center of the pie is lit up like a jack-o-lantern with a bright glowing orange grease. This “pumpkin pie” appearance is often a red flag for a super salty pizza; this pie is no exception. The dough is actually fairly firm with minimal flop, a nicely blackened undercarriage & a super crispy, crunchy crust. Despite the tremendous texture, the taste of the dough is basic & bland, carried by an ever so slight smokiness from the moderate char. A stringy & pully shredded mozzarella blend, the cheese must be of a cheaper low quality generating so much grease from an overload of butter fat. Engulfed & swallowed by excess oil pooling in the middle, the only thing I can taste is salt, salt & more salt. Drowning out the flavor of the mozz, the grease impedes & infiltrates the taste of the sauce as well. Essentially undetectable, the sauce is buried by the burdening oil, rendering a beyond savory & salty flavor. Overall, the volume of grease is just too much to overcome, soaking up the entire pie. The outstanding texture is ruined by the unmanageable oil flow, sinking this pizza. Perhaps an upgrade to a better quality cheese such as Grande mozzarella could make a vast improvement? Otherwise, pump up the quantity & sweetness of the sauce to counteract & control the amount of grease and there’s a chance this pie could climb into the 7s.
