Great flavor combination of muzz and sauce. Crust also had good flavor, crispness and char. Overall a really good pie. The mozz pie was really good at 8.5 and the sauce was good, but not as good as the mozz at 7.5. Average overall grade of 8.0

💎HIDDEN GEM ALERT💎 Tucked away in the industrial section near East Haven, owner John Frisco serves comparable gas oven New Haven style pizza. Essentially “Apizza” (pronounced: Ah-beatz), the oven doesn’t use coal or wood to generate high heat; but this pie has spectacular char for gas-fired pizza to go along with outstanding crisp & remarkable crunch. The dough is relatively thin & terrifically tasty, with a firm & beautifully blackened undercarriage, lightly covered with semolina seeds, keeping the pie dry & crispy throughout the body of the dough. The perimeter of the pizza is surrounded by a thinnish, modestly charred & delightfully crunchy crust, very close to the taste & texture of coal-fired crust. They use a wonderfully melty shredded mozzarella blend, on par with signature New Haven pizza cheese. Delectably creamy with a smooth flow for the most part, the char bubbles near the center of the pie have a crispier texture & sharp flavor with a well-done smokey finish, a fantastic combination of taste & varying consistency. The sauce kind of caught me off guard with its impactful kick, spice & punch. Possessing plenty of pizzazz & personality, the sauce has incredible bite & attitude to go along with a touch of sweetness. Scintillatingly savory with sensational seasoning, the sauce absolutely dazzles with garlic & pepper at the forefront creating a uniquely delicious overall flavor that shines & separates this pizza from typical Connecticut pies. All in all, the quality ingredients & exceptional texture make this one of the best non-coal fired pizzas in New Haven & all of CT. Travel-worthy for sure, this pizza is a true diamond in the rough & super sleeper spot. Just a notch below the elite coal-fired pies of New Haven’s Big 3, this is a fantastic alternative & some of the best gas oven pizza around.
