Pizza Review
No slices available here. Takeout is your best option as this place takes reservations. A nice “brick” oven pizza resides in the corner and claims it cooks at 800 degrees. I must of been early because the meter read 630 degrees... It wasn’t crispy at all. I think the extra 200 degrees would make that happen but why serve pizza if it wasn’t ready? The dough is fresh but this was a little chewy for my taste. The crust had zero crispness. The cheese is one of the best that I’ve had, super fresh and flavorful. The sauce is just enough to complete this pie. The sauce does take a backseat to the cheese. Overall, the char and cheese really made this a good pizza but I’ve had better wood fired pizza from Rocco’s and Forno Napoli. I give it a 7.2 because I know if the oven was hotter, this would be even better.
