Grigg Street Pizza in Greenwich absolutely floored me - this was, without a doubt, one of the best pizzas I’ve ever tasted. The undercarriage was flawless without a trace of flop - this pie had structure. The bottom was so well-cooked it held its shape beautifully, offering a satisfying snap with each bite. The cheese-to-sauce ratio was spot on. Nothing was overpowering—everything played in harmony. The sauce was flavorful and the cheese was melted evenly, creating a cohesive layer of flavor that blanketed each slice. What truly elevated this pizza, was the sourdough crust. It added a unique depth of flavor - slightly tangy, perfectly chewy, and with that gentle sour bite that kept each bite interesting. And then there was the finishing touch, a sprinkle of finely shaved Parmesan placed on the surface just enough to enhance every flavor without stealing the spotlight. It was subtle, but made the pie feel even more special.
