Just wanna start off by saying this app really needs to be updated for all the new spots popping up, anyway todays a special day as I made the trip up to Poughkeepsie NY for some championship Detroit pizza. The squares come out at 8x10 so yours truly needed two to fulfill my hunger after the 2 1/2 hour ride but my god was it worth the anticipation. This has to be the best cheese all I’ve ever seen on a Detroit pizza and is as textbook for the style as it gets no question why this guys won the last 3 titles at the Vegas pizza expo. Crunch and crisp surround all exterior surfaces of the crust and are pillowy and airy in the interior with what tastes like a Wisconsin brick cheese fused to the top, crazy cheese pull and a lot of “bite” in the flavor. I’m sure there’s a few day ferment to the dough as this guys quality and process off the charts. A rich tomato sauce is labeled on top over my “lifestyle” topping of choice roni cups and covered by a dusting of pecorino and chopped basil that doesn’t overpower you and leads to an intense flavor complex. The place is pretty small and was starting to get packed as the dinner time approached, their menu is loaded with incredible specialty topping pies all named after famous old school cars a nod from the owner who I wanna say grew up in the Detroit area. What started out as a pop up after the owner took top honors at a culinary school became its own brick and mortar in October of 2020 and has gone on to be award winning pizza ever since. No doubt this is worth the drive from anywere in the country to experience and big shout out to my man Keith for turning me on to it.
