Served Gal Gadot hot in 1-2 minutes with a hard Gramatan Ave crisp and a tiny Broad St. flop.

The sauce is very simple and old school. It is seasoned well and is very light but it lacks salinity. The mozzarella is pretty good, but not great, with average salinity and chew. The dough is very nice with a solid undercarriage and almost perfect char. The flavor is nice but also under salted.
Sub Score: 7.1
SAUCE: add a pinch more salt and this could touch the low 8.0’s
MOZZARELLA: with a higher quality and better placement this would really make the score jump
DOUGH: perfectly thin and crispy undercarriage and soft fluffy center of the crust but needs a pinch more salt.
Summary: the oven here is made of magic and fairy dust. In just one short minute it shot out a perfectly crisp 451° slice with very little flop or oil buildup. The only thing missing from this slice is salt. Add that then this rework would have landed in the low 8.0’s.
