Pizza Review
Had to see what the hype is all about from Rich H and Dave P. Very good, a little bummed that I ordered and paid for pepperoni on half and didn’t get it but the owner’s so nice I didn’t care. Took a rock on the windshield on the 55mjn drive there tho which makes this the most expensive pizza trip I’ve done but still glad I made it. The dough/crust is what people hype most and it is very good. More on the cooked/crispy side (would’ve liked it softer and chewy inside the crust like a freshly baked roll) but still fresh and high quality, firms up as it cools. It’s also thicker than you’d expect but a lot of that is their unique cheese blend which sits heavy. The sauce is fine but not the star of the show, got it on the side and actually has a spicy kick to it. Still a top 10 pizza for me, just being extra critical bc of the buzz. Tried the white just for fun, drive all the way down there for one pie. Very good if you’re in the mood for a ricotta base pizza. The sauce I ordered was for dipping but really didn’t need it. Again considering the dough is the star, you can’t go wrong with what pizza you order so just roll with whatever you’re in the mood for. Had to try a bonus cannoli, mild in flavor but I like the texture it’s a little smoother/creamier than usual, not bad.

Eye test- sweet Jesus Extreme Pedigree Alert - this place has a world class reputation. Is it nonsense, rated by people in the middle of nowhere, or the real deal? Best in PA is Beddia in Philly. Nothing else is even close. I believe I rated 8.8. Any other place that’s better is in Brooklyn or CT. Let’s see what’s up. Ratio: Thick crust, although far from Chicago. Cheese is quite heavy. As you’ll find out, it just doesn’t matter (a little Bill Murray summer camp movie reference) Execution- beyond comprehension. The quality of the baking and the taste of each ingredient is spectacular. Let alone the taste and crunch of the final product. It’s special. How about top ten, ever? Cheese- holy cow (funny, right?). The taste is different level. Great tang/zing. Not overpowering. Perfect texture. Certainly doesn’t taste like standard football pie but the taste isn’t so unusual that you’d turn your nose up and accuse it of being fancy. Perfection. Dough- one bite of crust with no sauce and cheese and the elegance, knowledge and attention to detail jumps out. As good as any bread in a great restaurant to start the night. Just wow. Crunchy, well done, but not burnt or cracker crunchy Sauce- plenty, and great taste. Far from subtle and yet not a vicious punch to the tastebuds. No sweetness at all. Nice spices, none overwhelming the other. Definitely has some tang and bite. Technically not my style but knocks my socks off. John Travolta said, “True artists need an audience, often for reasons that they would be reluctant to admit, but beautiful for the gift they give that audience.” This isn’t merely travel worthy. This is as good as any pizza anywhere. Although a somewhat singular style that can’t logically be compared to CT or Brooklyn, or the best of Philly or NJ, this easily has to be considered in Top 100 in USA. Tiny place. How do they do it?
