Pizza Review
If you like pizza that looks like Freddy Krueger’s face, then this well-done pie is right up your alley. While the cheese has that slightly burnt flavor, the dough is remarkably soft and a tad rubbery, lacking any real crisp. I’m always surprised when I see a well done pie with virtually no crisp. This is Hoboken football pizza: doughy & saucy. The dough is actually very tasty thanks to being made with Hoboken water, despite the lack of crisp. There’s plenty of sauce to go around but it’s somewhat salty, accented by oregano & basil. With such a bright red color, I expected the tomatoes to be sweeter. The cheese is cooked to the absolute max without completely burning it, which gives it a harder, more rigid texture. But overall, everything kind of works pretty well together for a mostly tasty pie, just needs some more crisping to bolster the score.
