💎HIDDEN GEM ALERT💎 While it’s technically not New Haven, they’ve been making similar old school style brick oven pizza since 1995 here in North Haven. The smell of the pie when you first open the box is an olfactory extravaganza, literally inducing a mouth-watering response. The dough is very thin, outrageously delicious, incredible flavor leading to a crispy, yet floury, simple & light crust. The undercarriage has some terrific char and bread crumbs to prevent moisture buildup; however, the dough is more floppy than crispy. A little light on the sauce but it’s wonderfully seasoned with tantalizing tang and enough zip to stand out from generic pizza sauce. The cheese is melted perfectly, a fantastically creamy complexion, tremendous texture and smokey flavor. Slightly greasy, but very manageable; drip & dab where needed. Overall, this is extremely good pizza. A little more sauce and a tad more crisp and we are talking 9s. I don’t hear this joint mentioned in the same breath as the New Haven legends but it belongs in the conversation and is well worth a trip if you’re making a journey to the area.
