Let me start off by saying that I really wanted to leave a higher score when I walked into this place. I love the mom and pop/family owned aspect of it and the people seem to be awesome.
No Margherita option is an automatic -1 point for me. No fresh basil? Really?
A stong positive, their crust is amazingly thin (in a beautiful way) and really crispy, I’d dare to say perfect. However, they don’t account for the thinness and load on too much cheese! I love cheese, but it’s too much in pairing with the crust. Have some money and ease up on the cheese, especially towards the middle of the pie to the undercarriage stays solid.
The sauce is good - slightly above average.
Reduce the cheese, take the savings and buy some San Marzano tomatoes to use in the sauce and and buy some fresh basil and this place would easily be in the high 8 range and maybe even in the 9’s. This is a gem with some small changes.
