Served almost hot in 1-2 minutes with a rugged Brewster crisp and a little Lo-Hud flop. First Bite Score: 7.3 The sauce is very bitter and muddled in flavor with a slight metallic twang. The mozzarella is high quality with good salinity and chew. The dough recipe is solid but it needs to be salted more and cooked less the first time in the oven. The undercarriage is cooked very hard, it tastes more like bread than pizza dough. Sub Score: 7.1 The sauce is the major detractor here. Whatever seasoning and salinity that might be present is overpowered by the aggressiveness of the sauce. The undercarriage could use less time in the heat and then this slice could hit the mid 7.0’s.
