Sister location of Rosa’s of Maspeth today I tried their famous upsidedown as a pie for the first time rather than slice. The crust has a great crisp to all edges and undercarriage but while not doughy it is rather dense but this is an old school pie that’s been as is pretty much since the mid 70s. The cheese has a great flavor, pull and is abundant melded perfectly to the top of the Sicilian dough but what you come here for is that sauce and grated parm. Flavor alone this is into the 9s the closest sauce I’ve come across to my favorite Brooklyn square or Emmetts as well as the parm that assaults the top of this square pie. The sauce is so rich and flavorful, thick and proud of it. The flavor contrast of the sauce and grated cheese is intense and everything you look for from this style. I know it’s tough to compare a fresh pie to a slice but I gotta say it’s better as a pie and the Williamsburg location is just as good if not better that the queens original, fight me. But seriously this is just another must hit spot in an area flooded with top tier spots!!!
