This pizza had good overall flavor due to the wisconsin cheese but the crust lacked flavor and no complexity and required much more fermentation to yield a good crust. The tomato sauce was sweet with a little tang but not reminescent of a great san marzano or calfornia plum tomato sauce. Overall, the crust on this pizza (including the undercarriage) was the biggest let down.
