Bright and fresh tasting tomato sauce and great ricotta. Pizza was very well cooked, fermentation was 8/10 and you can note the lack of blistering. Flavor and cooking made up for it. Can’t nail fermentation every day all day long, so when they do I would assume a score of 9.2 or higher
